Carrot Burfi - Diwali Special sweet Recipe


                                             Carrot Burfi






Ingredients

Carrot - 2
Coconut grated - 1 cup
Sugar - 1 cup
Water - 1/4 cup
Cardomom - 1
Dry grapes - 1 tsp
Cashew - 1 tsp (optional)
Ghee - 3 tsp

Ratio :   (All 3 items in equal amount)

Carrot - 1 cup
Sugar - 1 cup
Coconut - 1 cup

                                         


Steps:


i) Grease the tray with ghee.
ii) Saute carrot and  coconut in ghee.
iii) Carrot should be well sauteed
iv) Add sugar and water.
v) Add cardomom, dry grapes and cashew and Mix well.
vi) Mix in regular intervals
vii) When the mixture becomes thick and forms like a ball, remove from the pan and pour it to a greased tray
viii) Cut them  into pieces.
ix) Store it in air tight container.
x) Can be preserved for few days.
